Middle Eastern Fatteh

Ingredients:
  • 3-4 Middle Eastern flat breads

  • 500g Naked Planet Greek Style Yoghurt

  • 1 cup vegetable broth

  • 1-2 cloves of garlic for the yoghurt mix and the mince mix

  • Salt and pepper to taste

  • 1 medium onion

  • 1/2 tsp 7 spice mix

  • 200g vegan mince

  • 2-3 tbs vegan margarine

  • Handful of pine nuts

  • 1 cup chickpeas drained

Method:

1. Prepare the toasted pita by tearing up middle eastern flat bread into 2cm pieces. Don’t worry about the size… put in the oven and toast them until golden brown. Put aside. 

2. Prepare the yogurt. Slightly dilute the yogurt with vegetable broth. Don’t water it down too much, similar to a thick pourable cream. Add crushed garlic, salt and pepper to taste. Put aside.

3. In small pan,  fry finely chopped onion onion on medium heat. Once it starts to become brown, add garlic cook for a further 2-3 minutes, then add 1/2 tsp of 7 spice mix. Add your favourite vegan mince. Cook till dry and browned. Put aside.

4. In a small pan, fry 2-3 tbs of vegan margarine and a handful of pine nuts. Keep an eye on this and keep stirring. As soon as nuts go light brown take off the heat and set aside.

5. Ok now the fun part ..assembling. TAKE NOTE: only assemble just before you want to eat it. In a shallow serving dish place the tasted bread. Then drizzle a little broth over the bread. Pour the yogurt mix over the bread, add chickpeas, followed by the mince and finally sprinkle the pine nuts (including the margarine) and garnish with parsley and mint.
